A light & lean version of this family favorite.

Barbecued Chicken

Makes: 4 servings

Ingredients:

4 skinless, boneless chicken breasts
1/4 C reduced-sodium ketchup
3T cider vinegar
1T horseradish

2t firmly packed dark brown sugar
1 clove garlic, minced
1/8t dried thyme
1/4t black pepper


Directions:

Preheat broiler or grill.


Prepare sauce:  Combine and mix ketchup, vinegar, horseradish, brown sugar, arlic and thyme in a small saucepan.  Bring to a boil over medium low heat. Cook, stirring frequently until thickened, about 5 minutes.  Remove from heat and stir in pepper.

Brush tops of chicken with sauce.  Place face down on a foil covered broiler or grill.  Brush other sides with sauce.


Broil or grill 3 inches from heat, basting with remaining suace and turning until no longer pink in center, about 5 to 7 minutes per side.  Let stand five minutes before serving.

Helpful hint:

To keep the chicken from sticking to the grill, scrub the grill rack and spray it with vegetable cooking oil before starting the grill.
