Garlic and Bell Pepper Linguine
Makes: 8 servings
Ingredients:
1-1/4 pounds linguine
1 tablespoon olive oil
9 garlic cloves, minced
3/4 cup roasted red peppers, chopped
3 tablespoons non/lowfat Parmesan cheese, grated
Directions:
Cook pasta according to
package directions.
Heat oil in a nonstick skillet over medium heat. Add garlic and peppers
and saute for 2-3 minutes.
Mix pasta, peppers and garlic mixture in a bowl. Top with
Parmesan cheese.
