Protein Pumpkin Cheesecake 2 C nonfat ricotta cheese Directions: Mix all of ingredients (except crust) together until smooth. Pour into graham cracker crust and bake for about 40 minutes in a 400 degree oven. Let cool. Top each slice with light whipped topping. Serves six.
